Anxi Oolong is a kind of tea with light fermentation, which is like approximately 15% fermentation. Its making-process is quite complicated, including around 12 steps, in which the Yaoqing(tossing the tea leaves) is the most important one.
Unlike Dancong and Wuyi rock tea, Anxi Oolong tea is a ball tea, which means its shape is like a ball; whereas the Dancong and Wuyi rock tea is a bar shape tea. The shapes difference lies in their different making techniques.
In Anxi Oolong tea, the best one is Tie Guan Yin; Next comes to Ben Shan, Mao Xie, Huang Jin Gui and others. Tie Guan Yin has its distinguished orchid fragrance and fresh&mellow taste, which is called as Guan Yin Yun(Tie Guan Yin tea's overall aroma and taste in your mouth). Ben Shan tea's fragrance is similiar to Tie Guan Yin, but its taste and aroma is not as full and delicate as Tie Guan Yin.
