White tea is a slightly-oxidated tea, which refers to the tea does not fry or roll to kill the enzymes and to stop oxidation; instead, it is withered or dried directly from the fresh leaves. Since this process is comparatively long, tea leaves oxidation happens naturally.
There are four types of white tea, namely in their descending order, Silver Needle, White Peony, Gong Mei, Shou Mei. White tea originates from Fuding and Zhenghe cities in Fujian province, but now, there are also some types of Yunnan white tea in the market produced by the same making-techniques, just different tea bush varieties.
